Butterscotch No Bake Cookies

These Butterscotch No Bake Cookies are one of my most requested recipes.  The classic no bake cookie is re-invented with a delectable Butterscotch flavor.  Rich, creamy, and totally addicting.  This recipe makes about 15 cookies. There have been times I will make a batch for a treat while we watch a movie and yeah in the next few days we have eaten all 15 cookies between the two of us.  (They save really well in a ziplock bag.)

Now, if you have been following my blog it may seem like our diets here at the Jones home consist only of the food group sugar. Don’t be fooled. I promise I make nutritious meals full of veggies and protein for lunches and dinners.  I do, I really do! We just like a nice balance with some treats and I must say treats are a bit more fun to share with you all.  Especially because my sweet tooth is the size of Russia.  So if you want some balance try out my pan-fried chicken with a side of brussels sprouts.  Then you can balance your meal out with these amazing cookies. Problem solved.

There are a few things to keep in mind when you make these Butterscotch No Bake Cookies.  First, when you bring the sugar, instant butterscotch pudding mix (I like Jello brand), and milk to a boil IMMEDIATELY set a timer for one minute.  After one minute take the pan off the heat.  If you over boil this mixture you will have dry crumbly cookies and you want soft moist cookies.  So moral of the story, don’t over boil.  Also, it is key to use instant oats NOT old fashioned.  From experience if you use old fashioned oats your cookies will be too chewy.  If you keep those two things in mind and start now in about 15 minutes you will experience the amazingness that is the Butterscotch No Bake Cookie.  Enjoy!

Butterscotch No Bake Cookies

Makes ~15 cookies

1 1/2 cup sugar

1/4 cup instant butterscotch pudding mix

1/2 cup milk

1/2 cup butter

1 tsp vanilla flavoring

3/4 cup creamy peanut butter

3 1/2 instant oats

Combine sugar, instant butterscotch pudding mix, and milk in pan over medium heat.  Bring to a boil. Boil for 1 minute exactly.  Turn heat off and add remaining ingredients. Stir until combined. Spoon onto wax paper.  Let cool.
