Easy Cream Cheese Danish

This easy cream cheese danish recipe is the perfect way to indulge without breaking your back or bank! I recently whipped these up for a baby shower I threw for one of my best friends.  The morning of the baby shower I slept 2 hours past my alarm.  (Someone must have cast a sleeping spell on us because Tim and Lily were still sleeping too.)  I woke up and the baby shower was in less than an hour.  Thankfully I was planning on making these cream cheese danishes.  These danishes only take about 45 minutes to make. 30 minutes to prep (if you are taking your sweet time enjoying the experience) and 15 minutes to cook.  Long story short these puff pastry delights were baked and everyone enjoyed them at the baby shower.  We had a brunch theme shower so these pastries paired perfectly with raspberry scones, fruit, and a cheese ball.  Where are you going to serve these danishes? Easy Cream Cheese Danish

Makes 8 3-inch pastries

8 oz cream cheese

3 tbsp powder sugar

2 tsp lemon juice

1 1/2 tsp lemon zest

1 tsp vanilla extract

1 package puff pastry

1 package raspberries or fruit of choice

1 egg

1 tsp water

2 tbsp sanding sugar

Mix cream cheese, powder sugar, lemon juice, zest, and vanilla extract together until smooth.  Roll thawed puff pastry out on floured mat.  Cut four large circles.  Make small indent in each circle using a cup.  Poke the center of the puff pastry circles with a fork multiple times. Spread cream cheese mixture over center of puff pastry circles.  Top with fruit.  Stir water and egg together in small bowl.  Brush egg mixture on outer ring of pastry circles.  Sprinkle sanding sugar over egg wash.  Place in over heated to 400 degrees F and bake for 15 minutes until golden brown.
