Mint Brownies – Frankenstein Halloween Desserts

Frankenstein Brownie DecoratingLet me tell you how this cute Frankenstein Mint Brownies Recipe was created.  It all started last week when my friend threw a halloween party for the  “gouls and boys” in our neighborhood.  Even though Lily is only 9 months we had so much fun!  For the party I made a batch of my Monster Chocolate Raspberry Cupcakes. So that morning I woke up at 8:30.  Which meant I only had 90 minutes to make and decorate my halloween dessert before the party started.  I also had to get dressed, get Lily dressed, and feed Lily.  It was quite the rush!  We managed to get everything done.  However, as I was frosting the last few cupcakes I changed frosting tips because the tip to make the monster fur was taking more time then I had.  So I swapped the grass tip for a small star tip and did a green zig zag design.  As I was doing this I had a stroke of genius.  The green zig zag looked like the perfect frankenstein face!  The green frosting made me think of mint brownies.  So I altered my double chocolate brownies recipe to create scrumptious chocolatey mint brownies. Mint Frankenstein Brownies


1 cup melted butter

2 cups sugar

1 tsp vanilla extract

1 tsp mint extract

½ tsp salt

4 eggs

1 ½ cup flour

2/3 cup cocoa

Preheat oven to 350 degrees. Melt butter in large bowl. Add sugar, vanilla, mint, salt, and eggs. Mix until combined. Add flour and cocoa.  Stir until batter is smooth. Pour batter in 9×13 pan covered with parchment paper. Bake for 30 minutes until cooked through. Pull brownies out of pan using parchment paper and cut into rectangle servings.

Mint Frosting

1/4 cup butter

1/4 cup Crisco

1/4 tsp vanilla flavoring

1/4 tsp mint flavoring

1 tbsp + 1 tsp water

2 cups powdered sugar

1/2 tbsp meringue powder

Green food coloring

In large bowl, beat shortening, butter, flavorings, and water. Add dry ingredients and beat on medium speed until frosting is smooth. Mix in food coloring until frosting is light green.

Brownies (cut into rectangles)

Mint frosting

Milk chocolate chips

Candy Eyes

Black Gel Icing Tube

Fill piping bag with mint frosting fitted with small star (Wilton’s #21).  Start in the corner of the brownie and pipe a zig zag until you reach the opposite corner of the brownie.  To make the frankenstein hair place chocolate chips in a line along top of brownie with chocolate chip tips pointing down. Place one chocolate chip on each side of brownie for the neck screws.  Place two candy eyes on brownie.  To complete your frankenstein brownies use the icing gel tube to pipe a zig zag mouth and a small line of stitches by an eye.
