I love summertime! Not just because of the warmth and plethora of outdoor activities. Don’t get me wrong swimming, hiking, and boating is a blast. But think of all the farmers markets with fresh fruit on SALE!!!! S-A-L-E!!! Nothing tastes better on a hot summer day then fresh juicy crisp cold fruit. Plus, it is absolutely thrilling to purchase said delicious fruit and not feel like your emptying your wallet. I am probably a food nerd but I feel real joy about this. Which is why I had to load up on fresh strawberries when I saw them 50% off the other day. Win! So thank summertime and fruit sales for this amazing Strawberry Pie.
This recipe is quick, simple, and divine. The crust is so easy you will never want to use store bought crust again! It tastes like a sugar cookie which is a perfect combo for fresh fruit. The crust consists of 3 ingredients: flour, sugar, and butter. Combine these ingredients in a pie pan and then prick the crust thoroughly. Pricking the crust allows air to escape and prevents your crust from shrinking during the baking process. Bake for 12-15 minutes at 350 degrees until your crust is cooked through.
The filling consists of fresh strawberries glazed with Raspberry Danish Dessert. You can find Danish Dessert mix in the baking isle at your local grocery store near the jello. Follow the directions on the back of the box to make the fruit sauce using 2 1/2 cups of water. I have tried using the pie filling directions but found the glaze was to gelatinous. I much prefer I nice sauce-like glaze so that the strawberries can really shine. Once you prep the danish dessert glaze then pour it over your strawberries. Scoop your strawberries into your pie crust and chill your pie for about 4 hours until set. This wonderful Strawberry Pie can stand alone or be served with whip cream.
